What I Ate Wednesday | 5.15.15

I have been mostly Vegan for about a month and a half now. I plan to take this lifestyle seriously and carry it on for the rest of my life. I say ‘mostly’ Vegan because I still cherish people over animals. If someone prepares a meal for me I kindly explain my new lifestyle choice, however, I will do my best to eat what is provided for me. I will not eat meat or eggs, but if something is prepared with small amounts of cheese or other sorts of dairy, I will kindly take a bite to show my appreciation.

However, I do my best to prepare all my own meals, and I have been LOVING IT. So, I thought I would share with you a typical day of my life and diet as a new Vegan.

What I Ate Wednesday

9:00 AM I started out with Juice Plus, WATER, and a B-12 supplement. Followed by a fourth of a Watermelon (about 6 large slices).

11:23 AM I had a second breakfast/pre-lunch of: 2 Pink-Lady Apples, 1 Banana, with Cinnamon and Agave Nectar

1:00 PM  Lunch time, my personal favorite meal of the day. Today it consisted of: 1 LARGE cucumber from the Tower Garden, 1 Avocado, 2 Whole Organic Carrots, 1 Red Pepper, 3/4 Cup of Couscous (uncooked, though I wasn’t able to eat it all), Strawberry Dressing with extra White Vinegar. Followed by more WATER.

5:30 PM Dessert before Dinner! I whipped up some Chia Pudding with: 1 Banana, Almond Milk, Vanilla, (blend) and, of course, Chia seeds. Mix and Leave it in the fridge for twenty mins or until desired consistency.

8:05 PM My all time favorite snack is Lettuce (any kind) and Vinegar (again, any kind). Tonight it was Sweet Butter, Romaine, and White Vinegar.

8:50 PM I took my Juice Plus again with more WATER.

9:13 After coming to terms with the length a potato takes to cook in the oven, I made a small bowl of Linguine Pasta with Garlic Tomato Sauce.

10:09 The Sweet Potato was FINALLY ready. So that is all I had, 1 Sweet Potato. No additional sugar or topping, I love them plain! I only got to about half though, my brother ate the rest for he had just gotten his wisdom teeth out and needed something soft to eat.

I hope this helps or inspires someone when they feel lost thinking, there is ‘nothing’ to eat in a vegan diet. Don’t limit yourself, the possibilities are endless with an open mind and a little risk! Thought of the day:

” If you can’t take the heat, get out of the Kitchen.

Luckily, I can’t stand being cold” 🙂
